This is why gas water heaters do well, because it is possible to have 30kw gas water heater appliances which can heat water very quickly and not have to store hot water.
In some large use cases, you still need to store hot water.
Gas can work out a lot cheaper because instead of taking hours to heat an area gas can do it in a much shorter time and therefore there is a lot less heat loss. And who wants to wait hours to feel warm.
